Wheat is a general term for wheat plants. It is a monocotyledonous plant and a grass plant widely grown around the world. Wheat caryopsis is one of the staple foods of humans. It can be ground into flour to make bread, steamed buns, biscuits, noodles and other foods; after fermentation, it can be made into beer, alcohol, liquor (such as vodka), or biofuel. Wheat is rich in starch, protein, fat, minerals, calcium, iron, thiamine, riboflavin, niacin, vitamin A and vitamin C.
Wheat is one of the three major grains, almost all of which is used for food, and only about one-sixth is used as feed. The Mesopotamian Valley is the earliest region in the world to cultivate wheat, and China is one of the earliest countries in the world to grow wheat. In 2010, wheat was the second largest food crop in the world in terms of total output (651 million tons), second only to corn (844 million tons).
In 2017, a research team led by Jia Ji Zeng, a researcher at the Institute of Crop Sciences, Chinese Academy of Agricultural Sciences, completed the mapping of the D genome at the chromosome level and obtained a complete integrated map of the wheat D genome for the first time.
In 2018, a research team from the Institute of Genetics and Developmental Biology, Chinese Academy of Sciences, completed the sequencing of the wheat A genome and the mapping of the chromosomes. The structure and expression characteristics of the wheat A genome were fully revealed. This achievement was published online in the international academic journal Nature on May 10.
